【摘要】:Thistestmethodcoverstheenergyconsumptionandcookingperformanceevaluationofconvectionovens.Theresultsofapplyingitcanbeusedbythefoodserviceoperatortoselectaconvectionovenandtounderstanditsenergyconsumption.Thistestmethodappliestogeneralpurpose,full-size,andhalf-sizeconvectionovensusedprimarilyforbakingfoodproducts.Itisnotapplicabletoovensusedprimarilyforslowcookingandholdingfoodproduct,tolargeroll-inrack-typeovens,ortoovensdesignedspecificallytocookonlyonefoodproduct(forexample,specialtyovens).Thistestmethodisintendedtobeappliedtoconvectionovensoperatedclosetoratedinputinthedryheatingmode,withthecirculatingfanoperatingatitsmaximumspeedandwithoutanyinjectionofmoistureintotheovencavity.Theoven'senergyconsumptionandcookingperformanceareevaluatedinthetestmethodspecificallywithrespecttothefollowing:Thermostatcalibration(10.2),Energyinputrateandpreheatenergyconsumptionandtime(10.3),Pilotenergyrate(ifapplicable)(10.4),Idleenergyrate(10.5),Cookingenergyefficiencyandproductioncapacity(10.6),Cookinguniformity(10.7),andWhitesheetcakebrowning(10.8).Thevaluesstatedininch-poundunitsaretoberegardedasthestandard.Thevaluesgiveninparenthesesareforinformationonly.Thisstandarddoesnotpurporttoaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthisstandardtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
